Hi all! The question of the day for me is How do you define success? For me, I celebrated my little successes all day long which all work towards my big picture goal. I made breakfast, skipped Starbucks, packed my lunch and made it in time for my 7 am meeting. I resisted going out to lunch so I could walk and resisted going out to dinner when I got home late. I feel proud that I made healthy choices all day when I worked 12 hours. It could’ve been so easy to give in and I never did once – success!
Breakfast eaten on my drive in – 2 scrambled eggs, 1/2 cup blueberriesMid morning I was starving and tired so I had a green tea with a 4 Smartpoint mini Lara Bar. I think the bar is ok but not worth 4 points as I was still hungry. Enter 2 Tbsp pistachios for 2 sp.I was tempted to go out to eat but I stated the course with my simple lunch so I could head outside for a 45 minute walk.
A slice of butter bread topped with 1 Tbsp almond butter (5 sp), cucumber chips, a plum and berries.I wanted salty crunchy in the afternoon and picked this 3 sp bag of popcorners.My original plan for dinner was to recreate that tasty mini pesto ravioli that we had in France. But, The Husband wanted red sauce so I improvised.
While the pasta sauce cooked, I whipped up a quick homemade pesto.
I followed my simple recipe for pesto that you can find here.You will not use it all so save the rest and make this Cheesy Pesto Stromboli with it.I started my pasta sauce with garlic, onion and mushrooms.Then added ground turkey cooking until browned. Drain and add your favorite sauce. I used Trader Joe’s Arabiatta sauce plus a little Italian seasoning and tomato paste. Simmer while you cook the tortellini.Scoop in the prepared tortellini and stir slightly.Add a few dollops of pesto.Spread across the pan.Sprinkle 3 oz Trader Joe’s Lite Mozzarella and cover on low until cheese melts, about 4-5 minutes.Dive into that cheesy, pesto, tomatoey ?goodness. You get 1/6th of the pan for 8 Smartpoints.I had two bowls like this and The Husband had half the pan…I think he liked it lol!?I had 2 Dove chocolates for dessert (4 sp)

I love coffee too much and could easily drink it all day long. But, I am trying to be better about that and cutting down to one cup a day with a “treat” on the weekend at Starbucks. It has helped me sleep better and makes my stomach feel better as I think sometimes it’s too acidic for me.
